Coconut Dhal with steamed broccoli, black and brown rice

This recipe is sooooo healthy and can be made all from the pantry if you haven't got any fresh broccoli.


  • 2 cups split yellow peas
  • 400ml can coconut milk
  • 3 cups vegetable stock
  • 1 onion diced
  • 3 cloves garlic crushed
  • 1 tbsp garlic grated
  • 2 tbsp turmeric
  • 1 tsp sea salt
  • 1 bunch broccoli or broccolini
  • 1 cup mixed black and brown rice
Rinse the rice with clean sea water then add 2 cups fresh water and bring to the  boil. Reduce heat to a bare minimum and simmer on low for 35 minutes. Turn heat off without lifting lid and let is sit for a further 10 minutes. Fluff with a fork before serving. Rinse spilt peas with the deck wash if you are out at sea in clean water. 

In a large saucepan place the peas, coconut milk, stock, onion, garlic and ginger, turmeric and salt 
Simmer on a medium heat for 35 minutes.

Steam broccoli and serve on top.

Noosa Beach House Sri Lankan Fish Curry

30 minutes prep time
4 serves
very easy recipe

50 ml oil
1 medium onion peeled and roughly chopped
2 cloves garlic peeled and roughly chopped
1 x 5cm piece panda leaf roughly torn
2 sprigs of curry leaves
2 green chilles split lengthways
1/2 tbs fenugreek
1/2 tbs fennel seeds
1 tsp chilli powder
2 tsp cumin powder
1 tsp coriander powder
1 tsp tummeric
1 cinnamon stick broken into pieces
500 mls coconut milk
fish frame from a white fish or 1 tbs fish sauce
2 nice thick fillets (cut in half) of white fish (cut in half) with skin on
salt and pepper
steamed rice to serve
lime wedges to serve

Heat the oil is a large pot over medium heat and add the onion, garlic, pandan leaf and green chilli. Fry until the onions are translucent.

Add the dry spices, coconut milk and fish bones and stir to combine. Leave to cook until the mixture has reduced by half.

Remove the curry from the heat and strain it into a separate jug. Set aside until ready to serve.

To cook the fish rub with olive oil and season with salt and pepper. Cook on the grill side of a BBQ with the lid down, skin side down first. COok for 3 minutes or until the skin is crispy. Turn the fish and once the fish is cooked serve on a bed of steamed rice.

Pour the curry around the fish in the bowl. Serve with lime wedges.

Sweet Potato and chick pea patties

500g sweet potatoes
420g tin chickpeas
1/3 cup quinoa
1 tsp garam Marsala
2 garlic cloves
1 egg
1 bunch mint chopped
1/2 onion finely chopped

Cook the sweet potatoes til soft
Mash together sweet potato, chick peas, quinoa, haram Marsala, crushed garlic,egg and mint and onion 
Form into patties and fry on BBQ 


Rice salad

50g pecan nuts toasted
1 cup brown rice mixed with wild rice if you have it
1 smoked chicken breast
1/2 red onion diced
200g tin corn kernels
2 tbs currents
3 tbs chopped flat leaf parsley
80 mls orange juice
125 ml macadamia nut oil
2 tbs white wine vinegar
Salt and pepper 1 tsp Dijon mustard

Cook the rice absorption method
Toast the pecans 
Dice the smoked chicken finely
Finely chop parsley
Combine the chicken, cooked and cooked rice, pecans, corn, red onion, currants and parsley in a bowl
Mix together orange juice, oil and vinegar and Dijon mustard and pour over the salad. Season with salt and pepper. Cover and refrigerate over night

Grain salad

1 bunch fresh coriander
1/2 bunch parsley
1/2 red onion
1 cup of uncooked quinoa 
1 tin of brown lentils
2 tbs toasted pumpkin seeds
2 tbs toasted pine nuts
2 tbs toasted slivered almonds 
2 tbs baby capers 
1/2 cup currents 
Juice of one lemon 
3 tbs olive oil
1/2 pomegranate

Dressing 
1 cup yoghurt
1 tsp cumin seeds toasted and ground
1 tsp honey

Boil quinoa in 2 cups of water then lower heat for 15 minutes
Mix all ingredients 
Yummo and so healthy.
It might be hard to find fresh coriander parsley and pomegranate but it's still nice without it.

What is it all about? You'll never know if you never go.

You treasure the simple things in life. You appreciate fresh water, fresh fruit and veges and company of others.
You help one another.
You don't waste anything, especially water.
You love life. You are out there living it and not just watching it on TV after work.
It is respecting nature and the elements.
It is watching the tides and not the time.
It is about going with the flow... literally. The flow of the ocean. The flow of the tides. The flow of nature. No strict schedule. Living in the moment.
Respect. Respect for nature. Respect for each other. Respect for the weather, nature and what nature provides for nurturing. Respect for land especially when you haven't touched ground for a while.
It is leaving the need to be validated by social media behind and replacing it with waves of euphoria as you watch the sunset as the moon rises having sunset drinks with your new friends who have just anchored near by.
It is sharing.

It is challenge. The challenge of dealing with experiences you'd never encounter on land. The challenge of safe navigation. The challenge of getting to where you planned under sail using as little engine power as possible. The challenge of sleeping through a rocky anchorage. The challenge of a jammed anchor chain. If it doesn't come up you aren't going anywhere! 
Even planning a menu to feed your crew can be challenging. Chances are where you are going has no shops to duck off to for some milk.

FREEZING LEMONS - WHO KNEW

Amazing frozen lemons. All it is.....is a frozen lemon.
